This is the traditional Chinese style all purpose knife. It is suitable for all Chinese and Western cooking. Performed like Santoku knife for slicing, dicing, and mincing. The blade size is slightly bigger than Santoku for easy cutting for larger food.
This knife is designed for all purpose use. If you want to have a specific cut you need use other type of knives. We recommend you buy with RT-6600 for thin cutting. You need two sets of knives to alternately use every other day for professional cooks.
